We gently whole bunch pressed our Merlot on the 30th March. The berries surrendered a pale pink juice that was transferred into a stainless steel tank for cold settling. We then racked the clear juice and inoculated it with our special rosé yeast. Fast forward 2 weeks and we machine harvested some lovely flavoursome Syrah from Creekside Vineyard in the Bridge Pa Triangle. Post fermentation we blended these two parcels together and a little bit of magic happened.
We believe our 2016 Beach House Rosé is our best yet. Merlot and Syrah have a synergy with the soft red fruits of the Merlot interacting nicely with the fresh blackcurrant and peppery notes of the Syrah. The colour is a pretty pale pink with aromas of freshly picked strawberries and raspberries. This is a drier style rose that is perfect chilled on a summer’s day under a shady tree or paired with Gravlax salmon… yum!
